The magical milk processing process has no secrets for Verano Bertagni. He knows every little step and takes care of every step with loving attention in the dairy that bears the name of his family in Pieve Fosciana, in the heart of the Garfagnana.
Heir to a dynasty of shepherds from the Soraggio Valley, where the Serchia river originates, standard bearer of an ancient tradition, it is also thanks to his passionate commitment that the Garfagnina breed of sheep was saved from extinction to which it seemed destined.
It was a team game - of which Verano is one of the protagonists - that triggered the process of safeguarding the breed kept in the Orecchiella Park. Recognizable for its pure white fleece, similar to Massese but has dark hair and skin, the Garfagnina sheep is an ancient native breed that produces sweet milk, from which the expert hands of local cheesemakers can obtain a pecorino with a unique flavor. «Our great satisfaction is that, thanks to studies conducted in collaboration with various university laboratories, we can be sure of the origins of this sheep that today is starting to repopulate the High Apennines of Garfagnana. Our goal is to bring the flocks back to us, in the lands they come from ".

The Garfagnina sheep lives free in the prairies of a verdant land between the Apuan Alps and the Tuscan-Emilian Apennines. Able to feed on fresh grass daily and due to its genetic characteristics it is able to give a sweet milk to the palate. Hence a pecorino cheese - fresh or aged - that emanates the scents of the land of Garfagnana, tasty like no other, bearer of the intrinsic value of an ancient tradition saved from oblivion. Particular also from a nutritional point of view, very digestible and rich in proteins. Thanks to the knowledge and passion accumulated over time, Garfagnina sheep's milk pecorino, with its delicate and at the same time unmistakable scents and aromas, it is back on the market. And it represents one of the typical specialties of this sweet and at the same time austere land, testimony of biodiversity par excellence.
