The Rural “mission” of Podere Cristina is to participate in the recovery project of the Romagna hen. A passion born by chance, explains Valentina Cipelli. "I started the business nine years ago, from nothing. I moved to the countryside and started taking courses. So I discovered the Romagna hen and I found myself in the Rural world ". Love at first sight. "It was destiny: for me the countryside has always meant chickens, dogs and cats: because my grandmother has always had chickens ". And so the adventure began. Today the farm includes numerous hens, living outdoors with plenty of lawn and spring water. The diet is organic and integrated with everything that the hens find scratching around every day outside their "houses". They live free, day and night, «Also because they are of a vagrant nature. They cannot be reared in battery ". Some even go to sleep in trees. At the Cristina farm everything is organic: cereals are grown, from which flours are obtained which are then used in the kitchen for the restaurant. And then fruit and vegetables (an orchard with ancient fruit trees is being born): also in this case, vegetables and fruit are then used in cooking, fresh or processed.
Fresh Eggs
The Romagna hen is characterized by a livery that ranges from white, to black, with gold and red, in adulthood it reaches a weight of about 2 kg.
It produces eggs (about 150 per year) of great value and delicacy. "In addition to the unmistakable taste - says Valentina Cipelli proudly - our eggs are characterized by the consistency of the shell, given by a correct mineral intake, and for the non-bright yellow of the yolk given by the natural carotenes of food ".

The eggs have a beautiful pure white shell and have the particularity of having a very large yolk in proportion to the size of the egg.
