Paolo Sassi dedicates his life to plants. His father was a farmer and he inherited this passion by emulating it by specializing in the cultivation of ornamental plants. From beyond 30 years he manages a garden between Parma and Reggio Emilia, but the passion for agriculture does not abandon him. He is one of the custodian farmers of Rural where he participates with his main product: pumpkin Violina.
It is grown in Traversetolo, where red lands characterize the flavor. Obviously it is organic and Paolo's attention to sustainability is such that he has submitted the request to obtain the Demeter certification: one of biodynamic agriculture.
Cultivating the pumpkin looks easy, but it is not: much attention is also given to irrigation which is not too large and not just because water is an important resource, but also because the pumpkin, if it is too irrigated, is no longer good and does not conserve much. If grown with love, the plant does not get sick because it is a rustic variety that is rarely attacked by fungi and insects.
Paolo always carries his pumpkins around both fresh and cooked. Thanks to Rural, where he started selling the cooked Violina pumpkin, discovered how much consumer interest there is in this product. The rind has a yellow-hazelnut amber color, the pulp, of an intense orange, it's so sweet, tender and fragrant, to make this food so good that it can be eaten as it is, as a snack without seasoning or pairing.
Violina Pumpkin
The Violina pumpkin , Cucurbita muscata var. violin, it takes its name from the musical instrument of the same name as its line recalls it. In the Parma area it enters homes during the Second World War.
It is characterized by an elongated fruit slightly strangled in the center, the skin is wrinkled and presents the shallow longitudinal ribs. The flesh is bright orange in color and has a very popular taste.
Dolce, soft, tender is ideal for making past, velvety and full-bodied creams and delicate, that satiate leaving light (pumpkin is rich in water and the vitamin D that many people are deficient. But its versatility makes it a delicious dressing for pasta and risotto and makes it the extra touch to savory soups. Its yellow-orange flower is great as breading and frying. The sowing is best done in April to avoid late frosts and after about 4-5 months, is ready for collection.
