Rivalta, fraction of Lesignano de’ Bagni in the province of Parma, the Rosa dell’Angelo farm by Mauro Ziveri is based, keeper of ancient breeds of black pigs. It is here that his animals can live free to graze in the wide spaces of hills growing in the open and feeding on fresh grass, roots, tubers, berries and acorns that they find in nature, to which is added corn, barley, wheat and field beans. "Free under the sun, the wind, the rain, free to express your own instinct. Each pig has approximately a thousand square metres that allow them to grow happy and healthy.
The idea of this farm came from the need to produce a better ham than the standards, going back to rediscover the scents and flavours of a time," says Mauro. The result? Obtain better thighs to be salted and matured according to the most traditional methods possible to have an indescribable power of aromas and flavors. A challenge, his, launched in if the same time ago and today gives encouraging results.

The cured black pork ham 36 months, red colour and intense taste, remember the smell of the woods and has a deep sweetness that comes from the type of breeding and feeding in the open. Its taste has a persistence only. The structure is pliable and the slice melts in your mouth. The intensity of the flavor grows further when the ham is cut by hand. The choice of a totally handmade production, combined with the exclusion of additives allows to achieve an extraordinary quality: meats and cold cuts with the scents and tastes of the time. Black pork ham differs in a higher percentage of Omega 3. Also the Omega report 3 and Omega 6 it is the most balanced, for the benefit of a healthier diet. Contains less saturated fat and more unsaturated and is, therefore, indicated in a healthy diet. To fully appreciate the peculiarity of the ham, it is advisable to bring it to room temperature and cut it with a knife.
