FRESH MILK FROM BARDIGIANA COWS

When did the search in the 2015, in the Parma Apennines there were very few scattered head of Bardigiana cow at high risk of extinction. Like other breeds once widespread in our territory, it had been replaced with the arrival of the Frisona, considered more profitable and productive for the milk industry and thus the native heritage has changed.
It was born like this, in the natural park of Rivalta di Lesignano de 'Bagni, the recovery project of this ancient cattle breed.
The cows mainly feed on organic hay and herbs, milk has special characteristics and a unique flavor. As soon as it is milked it is pasteurized, bottled and distributed within a few hours.
