CHEESE OF SHEEP MASSESE

The Massese sheep is an ancient breed with a black coat, produces high quality milk thanks to mountain pasture between the Apuan Alps and the Tuscan-Emilian Apennines.
The pecorino made with raw milk from Massese sheep has an intense aroma and a strong flavor. It is worked again as it once was by Verano Bertagni, who runs the family dairy, active since the seventies, in Pieve Fosciana in the province of Lucca.
