THE SPINY ARTICHOKE OF ALBENGA HAS ARRIVED

It arrived at the Rural Market, the Spinoso artichoke from Albenga, one of the typical productions of Liguria. In addition to the violet color, the Albenga artichoke is characteristic for the consistency of the internal leaves which are tender and sweet, the best way to appreciate them is to eat them raw, dipped in oil preferably from Liguria. The stem is just as delicious! In the kitchen, the artichokes are, however, very versatile, lend themselves in fact to the recipes different: paired with the rice or pasta, as a side-dish in the oven or in a frying pan, or we can use it to prepare omelettes, tasty or savory pies. These artichokes are known throughout Italy for their goodness and for the care that growers put to offer a quality product to consumers.. On the market they are found with long stems and at least two complete leaves. It is grown in artichokes, that land allocated entirely to the planting of individual plants that exceed the height of a metre. Historically, it is a plant long-term for that can remain in the same plot for several years, even if it is better not to exceed three, then it becomes not very productive. The artichoke is a food with many beneficial properties: a true concentrate of vitamins and minerals (in particular, potassium, calcium and phosphorus), it also contains a lot of iron, and inulin, a prebiotic source polysaccharide that has a positive effect on the intestinal bacterial flora, thus inducing the growth of so-called microorganisms “good” and is recommended for diabetics.
