e’ THE BITTER ROOT OF SONCINO HAS ARRIVED

They are grown in the "fountain areas" in the North Oglio Park in the province of Cremona. The harvest takes place from October to March using a particular plow that turns the earth, finally, proceed manually by collecting the long taps 30-40 centimeters.
Being a chicory, initially the leaves were consumed, subsequently the interest shifted to the roots considered more pleasant.
The roots are white in color and resemble a carrot in shape and size. The bitter roots are a concentrate of elements that are important for the balance of our body. The vitamins contained are B1, B2, B6 and C, while the main minerals contained are magnesium, potassium, phosphorus, manganese, soccer, sodium and iron.
It has a unique flavor, slightly bitter, it should be consumed boiled in water and vinegar and seasoned with a drizzle of extra virgin olive oil, salt and pepper, but it also makes it very good au gratin in the oven or accompanied by sauces such as bagna cauda.
