THE QUARANTINA BIANCA POTATO FROM THE HIGH MOUNTAINS OF PARMA HAS ARRIVED

It is the biodiverse potato of the upper Parma Apennines, where Federico Rolleri cultivates it with dedication and is its keeper. The characteristic of the Quarantina potato is the limited quantity of sugars. It is an unmistakable potato, not so powdery compared to the other species in the white pulp. It is planted between May and June and harvested in September: it must take the first rains in order to create a skin that allows it to be preserved throughout the winter.
In the winter months it is kept cool and in the dark to prevent it from sprouting and losing its precious qualities.
Excellent for gnocchi and potato pie.
