Andrea Artoni was born and raised among the Zucchelle plums. “My family has been growing them for generations: from no less than 100 Years, – dice. - One of my earliest memories as a child is when I woke up in the summer afternoons among the rows of fruit ".
Today, Artoni is vice president of the Association for the enhancement of the Zucchella di Lentigione plum. "With all the producers who have joined, we have developed a sort of disciplinary - he explains -. The simplest recipe possible, the one our grandmothers used, our aunts: only fruit and a little added sugar. Circa 1 hg of sugar for every kg of pitted plums, with small variations every year, depending on the sugar content of the plums ".
A family-run laboratory was identified in Carpineti and all the associates, using the same logo, they produce the jam there. It recalls the court of San Giorgio with the Romanesque bell tower, typical of Lentigione. "It is the court - recalls Artoni proudly - where some scenes of the first film by Peppone and Don Camillo were shot. We are pleased, because basically our goal is to enhance the plum that grows in these areas made famous by the characters of Giovannino Guareschi ".
Jam of
zucchella plum
The main feature, as the name says, is that it is a very juicy plum: Zucchella from "sughella", juicy. It is a small, firm plum, elongated, with reddish-purple skin covered with a protective whitish veil and yellow-amber pulp. It is harvested between July and August and can be eaten fresh or made into jam. Once it was also used for the production of grappa. The typical production area coincides at a glance with the territory of the Duchy of Maria Luigia, Parma, Piacenza and Guastalla: that of Lentigione is the most suitable area, perhaps also thanks to the change in the course of the Enza over the centuries, which has left a lot of iron and elements in the soil that “give” a particular sweetness to its fruits.
Zucchella plum jam is very versatile in the kitchen. The "classic" is represented by tarts (in Lentigione it is said that it is the "queen" of jams for pies), but it also goes very well with aged hard cheeses, or low-fat yogurt; it is used for the preparation of sweet tortelli, or for sweet and sour dishes: a classic is the combination with pork.
