Pinuccia Morini and Renzo Pacchiarini have founded the association onion Borettana to spread knowledge of a unique product. They have analysed the land, studied, in-depth history, trawled the documents kept in the archives of the production area, which goes from the province of Reggio Emilia up to the Parma and Piacenza. After years of assiduous commitment, they became the champions of an ancient tradition. "Our intent is to spread the knowledge of the onion Borettana – so called from Boretto, the country of origin – and to enhance the area in which they are grown". Raise awareness and bring forward the idea that the local product is an excellence: the main purpose of the association. To center the lens, Pinuccia and Renzo, with a strong belief in the iron and in-depth knowledge, are promoters of initiatives, sometimes even fanciful. Organize events, participation of producers in trade fairs and markets, theme dinners with a lot of readings related to the product. "We want to give visibility and space to the knowledge of the product – says Pinuccia, as the spokesman for –. Borettana Onion
As the name says, the small onion Borettana “born” in Boretto, Municipality in the province of Reggio Emilia. Small, it has a bulb flat, it is clear on the inside and the straw color on the outside. It has an intense flavour and sweet at the same time. Particularly suited to be preserved in oil, pickled and sweet-and-sour, it becomes a side dish a delicious accompaniment to boiled or any type of second to base of meat, but also vegetables. In fact, it can also be combined with cheeses, better if seasoned. The Borettana fits perfectly to the role of protagonist in many of the dishes of the tradition.
Rich in vitamin C and especially in mineral salts – particularly calcium and phosphorus – precious for the human body, from 2005 he got the mark of quality De.co ( City name).
