Angela Frati, allevatrice custode, titolare di una piccola azienda agricola sulle prime colline di Fidenza racconta:<<Mi chiamano la salvatrice del tacchino di Parma e Piacenza. Quando più di venti anni fa ho acquistato il podere Monticello di circa 15 ettari, lo scopo fin dall’inizio era di fare sia agricoltura biologica, coltivando cereali e foraggio, sia un allevamento stagionale di avicoli allo stato brado, recuperando anche antiche razze che rischiavano di andare perdute, alimentandole con granaglie di mais, frumento, orzo e pisello proteico, prodotti nella mia azienda>>. Il Turkey of Parma and Piacenza is an ancient race introduced in our region centuries ago, probably during the Bourbon domination, with imports from Spain. Was widespread in the territory of the Duchy of Parma and Piacenza and much sought after, beyond the local boundaries, for the beauty of its feathers and for the quality of its meat. Of size larger than other local turkeys, has a mostly greyish plumage, with shades from black to steel gray, to black metal, with lighter stripes approaching towards the tail. This breed (abandoned after the 1970s in favor of heavier breeds), now is at great risk of extinction: the few leaders present are found mostly only in the province of Parma. To Angela is a virtuous quality breeding, which now has about 50 more rustic breed turkeys, almost wild. << you have to re-evaluate this Turkey meat, which is quite different from the one we find on the market.
